Step 1

For preparing ginger gravy, soak tamarind in 1 cup of warm water.

Step 2

Heat coconut oil in a deep frying pan and fry the ginger. Drain the ginger out and leave it aside to cool.

Step 3

Blend the fried ginger pieces till smooth.

Step 4

In the same oil, sautT ginger paste, chilly powder, green chillies, turmeric powder, fenugreek seeds and asafoetida. SautT till the oil separates.

Step 5

Then add in the jaggery and mix well.

Step 6

Pour the tamarind juice and allow it to boil till the gravy becomes thick.

Step 7

In another vessel heat coconut oil and splutter mustard seeds.

Step 8

Toss in the curry leaves and dry red chillies.

Step 9

Pour it into the ginger gravy and mix well.

Step 10

Ginger gravy is ready. Serve as a side dish for onam sadhya.
