Directions

Step 1

For preparing healthy mushroom soup, soak the wild mushrooms in enough water for 20 minutes and then chop it.

Step 2

Heat a little butter in a pan. SautT the onions for 3 minutes.

Step 3

Toss in the fresh mushrooms and the soaked wild mushrooms. Allow it to cook on low flame for 5 minutes.

Step 4

Then stir in the maida and mix well.

Step 5

Add in the apple juice and chicken stock. Allow it to simmer for 15 minutes.

Step 6

Blend the soup in a blender.

Step 7

Put the cream in and re-heat the soup in a vessel carefully.

Step 8

Sprinkle pepper powder and mix well. Remove it from the flame.

Step 9

Healthy mushroom soup is ready. Serve hot with a little whipped cream on top and a sprinkle of pepper powder.
