Step 1

Mix all the vegetables, chillies, curry leaves, turmeric powder and water and allow it to cook.

Step 2

Grind together to a fine paste grated fresh coconut, cumin seeds and garlic pods.

Step 3

Mix it with the vegetables together with salt and bring it to a boil.

Step 4

Allow it to cool for 5 min.

Step 5

Now add 3 cups of thick butter milk and warm the mixture again on slow fire. Do not boil. Remove from fire.

Step 6

Heat oil in a pan. Add mustard seeds and fenugreek seeds to it and allow it to crackle. Then add dry red chillies and the curry leaves.

Step 7

Add this seasoning to the above mixture.

This is not KALAN. This is an ordinary moru curry. Kalan should not contain -- garlic, small onion, churakka or papaya. Morever Kalan should be made out of thick Curd. Items added in Kalan in Kochi and Malabar area are -- Chena 1 inch sq. pce, eathan kaya/nenthran raw- 1 inch sq pce and 1 inch length valiaya chembu/kandi chembu. For chilly powder, pls add pepper powder. If cooked properly, this can be stored in procelain container (bharani) for upto 3 months.

kalan is made using thick curds (and not butter milk)

Hi This is not kaalan. Kaalan will not have garlic or shallots. Moreover we have to add a bit pepper for kaalan. The recipe sounds like kaachiya moru ( Buttermilk).

ok recipe is fine , but change the title . kalan is not this .

There is never garlic in any kalan. It might tase good but don,t call it kalan

Add two drops of lemon juice to butter milk and keep the butter millk @ 100 deg F for few hours. Kalan tastes excellent!
