Kadai Chicken

Kadai Chicken is a very delicious chicken curry dish usually served in restaurants. This easy to prepare curry dish is popular for its simplicity and hence a favorite with all. Chicken pieces are cooked in a thick bottomed ‘Kadhai’. No additional water is added while cooking. Chicken pieces are being cooked in its own steam and from the onions added. The distinct aroma of capsicum and the mild spicy flavored gravy of Kadai Chicken are simply enticing. Kadai Chicken goes well with naan, roti, chappathi and almost all rice based dishes. Ingredients

Directions

Step 1

Wash the chicken thoroughly.

Step 2

Heat oil in a non stick pan or a kadai.

Step 3

Add jeera, bay leaves and dried red chilly.

Step 4

When the jeera begins to splutter, add garam masala, onion and saute for sometime over medium flame for 2 minutes.

Step 5

Add ginger garlic paste, powdered masalas, chicken, salt and saute everything for 2 minutes. Put the flame on minimum.

Step 6

Add desi ghee and cover the lid of the vessel.

Step 7

Open the vessel after every 10 minutes, saute and cover again.

Step 8

After 30 minutes, check if the chicken is cooked or not. It usually takes 30- 45 minutes to cook chicken this way as we are not putting water. It is cooking in its own steam and the water provided by cooking onion with it.

Step 9

Garnish with chopped coriander leaves.

Step 10

Add 1 tbsp of desi ghee when chicken is cooked.

Step 11

:- Serve Kadai Chicken warm with pulaao or garma garam pooris/ parathas/roti

This dish came out good... but there was a slight taste of the Cumin seeds... i had put in 1/2 tsp as said but guess that much isnt required... apart frm that the dish was not bad...

What is the difference between garam masala and powdered masala, never heard of anythin like that, how can garam masala be made without coriander seeds. The recipe is for the normal chicken curry we make, why is it called kadai chicken???
