Step 1

Wash and drain rice. Set aside.

Step 2

Heat 3 tbsp of ghee in a pan.

Step 3

Fry half of the sliced onions, until golden brown. Drain and keep aside.

Step 4

In the remaining ghee, fry cashew nuts and raisins separately.

Step 5

Add the rest of the ghee to this pan.

Step 6

SautT all the spices, ginger & garlic and fry for a while.

Step 7

Add rest of the sliced onions and fry, until translucent.

Step 8

Add rice and fry for about 10-12 minutes approx. making sure that the grains are not broken.

Step 9

Pour water and increase the heat to high.

Step 10

Add salt and as soon as the water starts to boil, simmer and add coriander leaves.

Step 11

Cover the pan with a tight lid and cook, until the rice is done and the water is totally absorbed.

Step 12

Garnish with fried onions, cashew nuts and raisins.

The Ghee rice turned out real awesome with just 15 mins prep before the cooking. I used ginger garlic paste instead and Step 11 of cooking the rice was done by me in a pressure cooker where you close the lid without the whistle and once the steam comes out, lower the flame and keep it cooking for 7 mins exactly and then turn off the flame and the ghee rice can be scooped out after 20 mins!

For 2 cups of rice, the amount of onion, cashew and raisins are too much ( probably half would be enough). Also, rice takes only 3-4 min to be fried ( as others have noted). Better to cook in pressure cooker. Very easy and tasty recipe.

Sneha & Ajayan Thanx for ur comments, but the way I do it.... 10-12 mnts on VERY low flame....other wise the rice will burn out!!!! Fryin the rice for this long wz nvr over cooked!!!

3-5 Mts is enough to fry rice.

The rice need only 3 or 5 mints of frying. if you fry more there is a chance of overcooking.
