Step 1

For preparing kerala egg masala, first half the boiled eggs. Keep this aside.

Step 2

Grind together coconut, cumin seeds, chilly powder, coriander powder and turmeric powder.

Step 3

Heat oil in a kadai/wok and splutter mustard seeds. Add whole red chillies, curry leaves and fry.

Step 4

Then add the sliced onion, ginger, garlic and green chillies. Saute well.

Step 5

Add the tomatoes and saute well till well blended.

Step 6

Add the ground coconut mixture and saute well till oil come out of the mixture.

Step 7

Add salt and little water and give it a good 5 minute boil. Stir in the boiled eggs. When gravy becomes thick, remove pan from flame. Kerala egg masala is ready. Enjoy.
