This is perhaps the most popular chicken based dish in Kerala Cuisine. This is a semi thick, hot and spicy flavored gravy so there is enough to mop up with. The red colored thick gravy with lots of onions is sure to impress you. You can cook this at home easily for a function or party. Kozhi Roast goes well with Appam, rice and a lot many Indian breads. Marinated chicken pieces are slow cooked in a spicy masala mixture and slow roasted in low flame till the full brownish texture appears.   • For preparing the spicy dish, first wash chicken pieces and drain well.
  • Soak this with a mixture of turmeric powder, lime juice and salt.
  • Heat oil in a pan and saute ginger, garlic, green chilly paste on a low flame till it become slight brown.
  • Add onion and little salt and saute it till become golden brown.
  • Add chilly powder, pepper powder and coriander powder.
  • Saute it well and when a good flavor comes, add marinated chicken pieces to it. :- If oil is less add little more oil.
  • Keep a high flame and stir intermittently till oil comes out.
  • Close the vessel and cook on low flame for haif an hour.
  • Then add garam masala powder and garnish the roasted dish with curry leaves. The flavorful delicious roasted chicken is ready.
  • :- Serve the dish hot!!!
