Step 1

For preparing khamang cucumber/kakadi/vellarikkai salad, first mix the chopped cucumber, roasted peanut powder, sugar and lemon juice. Mix well and keep aside.

Step 2

Heat ghee in a pan and splutter cumin seeds.

Step 3

Add green chillies and curry leaves. Fry in low heat for a few seconds.

Step 4

Pour this tempering into the cucumber mixture when the cumin seeds become dark brown.

Step 5

Add required salt just before serving. Garnish with coriander leaves.

Step 6

Khamang cucumber/kakadi/vellarikkai salad, a typical maharashtrian recipe, apt during fasting season is ready.
