Remove the skin of the Koorka and cut them into small pieces.
Put these pieces into normal water as shown in the picture and keep it aside.
Heat the oil in a frying pan.
Add the chopped / crushed shallots, green chilli, curry leaves into the heated oil and stir it well.
Wait to change the colour of the mix into golden.
Add the cleaned and washed koorka into the heated oil and other ingredients and stir it well.
Add some water and salt into the mix and let it to cook well (if necessary, cover the frying pan with a plate).
After evaporating the water from the mix, remove the frying pan from the stove and stir the mix well.
This koorka fry can be served with chappathi, poori and as fried side dish with rice.
