Step 1

Wash kovakka and drain. Cut off the stem and slice into long pieces. Ripe ones should be discarded.

Step 2

Heat oil and splutter mustard seeds. Add chopped shallots, crushed red pepper, garlic and the coconut pieces.

Step 3

Saute well until the shallots are golden brown. Add turmeric powder.

Step 4

Stir and add the kovakka/tindora slices. Add required salt and cook in medium flame until done.

Step 5

Do not add water and let any remaining water dry completely.

Step 6

Your kovakka/tindora fry is ready and serve hot with rice.
