Step 1

Wash the mint leaves well.

Step 2

Grind together green chillies and mint leaves into a smooth paste. Keep it aside.

Step 3

Mix together yoghurt, turmeric powder, chilly powder, ginger paste, garlic paste, garam masala, pepper powder and salt in a bowl.

Step 4

Add pudhina-green chilly paste into the above.

Step 5

Mix them well to make it into a smooth mixture to get the consistency of a thick paste.

Step 6

Wash the chicken and dry well.

Step 7

Make small slits(not too deep) in the chicken.

Step 8

Smear the above paste nicely on the bird and also into the cavity of the chicken.

Step 9

Cover all areas.

Step 10

Marinate in the fridge for 2 - 6 hrs.

Step 11

:- The longer the better.

Step 12

Pre heat oven to 350 degree centigrade.

Step 13

Place in oven on aluminium foil in a baking tray.

Step 14

Cover chicken with foil to prevent burning.

Step 15

Bake evenly, until juice runs clear.

Step 16

:- Alternatively, use meat thermo meter.

Step 17

After about 1 hr, remove foil and let grill for 20 more mins at 400 degree centigrade to get that well browned look.

Step 18

:- Always check, if fully cooked and no blood is visible.

Step 19

:- Serve hot with rice or flat bread.


hi shakti, it looks like a very tasty recipe.i havent tried it as my microwave oven doesnt have the facility to adjust the temperature.i can only adjust the time.so can you pls email me the exact time i need to keep it in the oven
