For preparing lemon thai mushrooms, pierce the mushrooms with a fork and marinate it with salt.
Grind the ginger and chilly powder and keep it aside.
Heat oil in a vessel and fry the above ground masala.
Toss in the marinated mushrooms and stir fry it on low flame.
Pour 1 cup of water, lemon grass, salt and lemon leaf. Allow it to cook till done.
The add in the coconut milk and allow it to simmer on low flame for 2 minutes.
Remove it from the flame and add in the lemon juice. Mix well.
Lemon thai mushrooms are ready. Serve immediately.
