Cook carrot, potato and onion pieces with 2 cups of water in low heat.
Strain and extract the vegetable stock and keep aside. :-Note that the lettuce soup recipe requires 1 1/2 cups of vegetable stock.
Heat olive oil in a pan and saute cooked carrot, potato and onion pieces.
Add chopped lettuce leaves and vegetable stock. Add required salt and simmer in low heat for a few minutes.
Add 1 tsp honey to the soup recipe. Stir gently.
Lettuce with carrot soup is ready and serve hot.
