Step 1

For preparing mango rice, first soak rice in required water for 20 minutes. Strain it and keep it aside.

Step 2

Heat ghee in a pressure cooker and deep fry almonds and cashew nuts. Remove it when it becomes light brown.

Step 3

In the remaining ghee, fry green cardamoms and soaked rice. Add required salt, turmeric powder and hot water. When rice is cooked, remove from fire and allow it to cool.

Step 4

In another vessel, add in mango puree, grated coconut, sugar and saffron. Allow it to cook stirring it continuously till the mixture is thick.

Step 5

Mix cooked rice with this mixture in a oven-proof glass dish.

Step 6

Bake it in a preheated oven at 160 degree celcius for 5 minutes.

Step 7

Garnish with roasted nuts.

Step 8

Mango rice puloa is ready. Serve with chicken curry.
