Ingredients

  • 1.* 1 pork tenderloin (1-1 ½ lbs.)
    2. sliced into medallions and lightly pounded with the palm of your hand * 1 clove of garlic
    3.chopped * 1 red onion
    4.sliced into ½ moons * 2 green apples
    5.cut into ½ moons * 1 head of fennel
    6. quartered
    7.cored
    8.and sliced * 2 tbsp. of extra virgin olive oil * ¾ cup of white wine * 1 tsp of dried thyme * Salt and pepper to taste

Directions

Step 1

. Season medallions with salt, pepper, and thyme. 2. Heat olive oil in a large pan, and brown pork on both sides. Remove from pan and set aside. 3. Add wine to pan and deglaze by scraping any loose bits from the bottom of the pan. 4. Toss in fennel and onions, sautT until veggies begin to sweat. 5. Stir in garlic and apples. Cook until tender. Add pork back to the pan until it is heated through. Enjoy!
