Step 1

For preparing mixed veggie cutlets, pressure cook the potatoes, carrot, beans and beetroot in salt water.

Step 2

Drain the water well and smash all the veggies with a fork.

Step 3

Add in chilly powder, pepper powder, ginger, green chillies, onions, curry leaves and coriander leaves. Mix it well.

Step 4

If it is watery, put some bread crumbs and mix it.

Step 5

In a glass mix in vinegar and required salt. Pour this into the mixture. Add salt if required.

Step 6

Make cutlets with the mixture.

Step 7

Dip it in bread crumbs and then in egg.

Step 8

Heat oil in a frying pan and fry the cutlets till it becomes brown.

Step 9

Mixed veggie cutlets are ready. Serve hot with ketchup for snacks.
