Step 1

Add milk to mutton liver and keep it for 15 minutes to remove impurities, any bad smell and to tenderize the liver.

Step 2

Heat pan and add mutton liver, turmeric powder and chilly powder. Do not add salt, it will rubberize the liver. Mix well and add water.

Step 3

Let it cook for 5 minutes in medium heat. It shouldnt be cooked more than 5 minutes. Liver needs only 5 mintues to cook. Let the water evaporate around 80%, need little gravy. Keep it aside.

Step 4

Heat pan and add 1 tablespoon of coconut oil and and add shallots and fry until translucent.

Step 5

Add ginger, garlic, green chillies and fry for few minutes until the raw smell of garlic goes away.

Step 6

Add Corriander powder, garam masala, Pepper powder, salt and saute nicely for few mintues.

Step 7

Add the cooked mutton liver with gravy to it and mix well and fry for some around 5 minutes.

Step 8

Add half teaspoon of cooconut oil, curry leaves, garam masala, pepper powder and fry for few minutes in low heat until the color of liver changes.

Step 9

Serve Mutton Liver with Pepper hot with rice or porotta.
