Step 1

For preparing mutton pilaf, heat olive oil in a vessel and saute onion, salt, garlic and celery till it becomes transparent.

Step 2

Pour in the sherry wine and mix well.

Step 3

Add basmati rice, carrot and beans. Allow it to simmer for 2 minutes.

Step 4

Then pour in the mutton stock and thyme. Allow it to boil, then lower the flame.

Step 5

Cover the vessel and allow it to cook on low flame till the water is absorbed completely.

Step 6

Drizzle in the soya sauce and slowly mix it.

Step 7

Garnish with coriander leaves and remove it from the flame.

Step 8

Mutton rice pilaf is ready. Serve hot with any curry.
