Nadan Beef Fry is a slow roasted traditional styled dish that tingles taste buds and a dish that will never make you say ‘enough’. Usually the dish is enjoyed and served as side for main course dishes like appams, porotta and dosas. You can adjust the flavor making it fiery hot or mild as per requirement. Street vendors in Kerala sell Parotta with Beef Fry which is a hot Thattukada dish both among young as well as old alike. If the beef meat has fat, then the Nadan Beef Fry tastes nice. If the meat is lean then there won’t be much taste and flavor for the dish. The fat in the beef pieces enhances the taste of the dish and also reduces usage of oil.

For preparing Nadan Beef Fry, the beef pieces are pressure cooked in a spicy masala mixture and later slow roasted over low heat with required seasonings. Slow roasting renders a blackish tint to the beef. What makes the dish unique and special is the homemade garam masala. Try to use freshly ground masala powder that does the trick. To Make Garam Masala, Heat and Grind 7 ingredients given below:

  • For preparing Nadan Beef Fry first cut beef into small pieces and wash it well.
  • Chop onion into two pieces.
  • Heat oil in a heavy bottomed pan.
  • Add ginger, garlic and 3/4 of the chopped onion. The rest of onion can be added as decor while serving.
  • Stir it well until it is completely sauteed and slightly golden in colour.
  • Make a paste of Garam masala, chilly powder, coriander powder, turmeric powder and salt.
  • Add this paste to the onion ginger, garlic mixture and saute on slow fire till and the oil separates from the masala.
  • At this point, add the beef and saute again on slow flame till the water comes out of the beef.
  • Once the water is fully out of the beef, add the curry leaves and coconut pieces.
  • Cover and cook, adding 1/2 cup more hot water to cook again on medium flame. After half an hour, check if cooked properly and remove. Saute in little coconut oil and fry if that taste suites you. A Note: while serving add left over fresh onions on top to decorate or keep on side of the plate.
  • Tips/Suggestions:- :- Once the beef starts to cook and you find on an open vessel it takes time, you can use pressure cooker and wait for 3 to 4 whistles and it should be cooked properly. :- You can add 2 tbsp of vinegar too to the beef to cook it properly.
