Simple making of Puri for Pani Puri. Take 6 measures of soji, one measure of maida, one measure of wheat flour, a little salt to taste and make a thick dough with water. Allow to set for about half an hour. Then make out a large roti, cut with a cup / lid cap into small disks as shown and deep fry in cooking oil.. cool it for sometimes up to 5 to 6 hrs in the open and then crack one face of the puri ( it will remain crisp ) stuff with a potato curry, fill with a tamarind chutney and EAT !
