Soak gelatin in 1/2 cup water and keep aside.
Add tender coconut water to the sugar. Melt the sugar in medium heat.
When the sugar melts, add the soaked gelatin and remove from fire. Allow the mixture to cool.
Add orange juice, lime juice and scraped coconut pieces into the mixture. Keep this mixture in a refrigerator to set.
When the mixture begins to set, remove from fridge and beat the whole mixture once more. The coconut pieces should mix well with the jelly.
Pour the orange and coconut mixture into a serving tray and cool in refrigerator.
Orange juice with coconut jelly is ready and enjoy during summer season.
