Soak basmati rice in water for 5 hours.
Grind together basmati rice and cooked rice along with coconut milk into a very fine batter.
Microwave the water for 15 - 20 seconds, to make it luke warm.
Add sugar and yeast and stir well.
Keep it aside for 5 mins.
Add the above yeast solution into the batter.
Leave it overnight for fermentation.
At the time of preparation, add extra sugar to sweeten your appams.
Heat a non-stick appachatti or any other kadai which has a cover.
Pour a ladle of batter into it and spread it a bit by twisting the pan with your hands.
Cover and cook on medium heat for 2 - 3 mins or till it has cooked well.
