Step 1

Mix rava and maida.

Step 2

Add water to make a tight dough.

Step 3

Make large chappathis using this dough and cut out small round shapes from it.

Step 4

Deep fry these in oil till they become crisp.

Step 5

Soak tamarind in water for 3 mins. Extract the juice and keep it aside.

Step 6

To make the sauce, grind together mint leaves, coriander leaves, salt and green chillies into a thick paste.

Step 7

Mix the ground paste with the tamarind extract.

Step 8

Boil potatoes and cut them into small pieces (Do not mash).

Step 9

Mix some salt and red chilly powder on the potatoes and fry in oil.

Step 10

While serving, make a hole inside each puri and place some amount of sauce inside it along with a potato piece.

the puris are becoming flat how make them perfectly

But the puris get flat, it gets saugi after few minutes. It doesn`t turn out like the real puri`s available in store or the vendors who sell in India.

to make the poori knead the dough in soda water. the result is excellent u get real crispy and puffed up pooris. (soda water - commerical canned drinking soda)

Adding thin rava to the maida whilemaking dough makes puris to retain their crispness. Thou it makes rolling the puris a bit difficult but worth the effort :)

Sweet chutney also has to be made. That is with dates- 1 packet, tamrind - small quantity, red chilly - 2, jaggery - small piece, grind it together with a little water. This can also be stored for future use. Also add 1 spoon badisop and ginger in the other mint water
