For preparing Payar Ela Thoran, first wash the Achinga leaves well and finely chop them.

Heat oil in a pan or a kadai. Splutter mustard seeds and add the chopped leaves. Saute for a few minutes.

Grind coconut, shallots, cumin seeds, curry leaves, green chillies and garlic to a coarse mixture.

Add the coconut mix, turmeric powder, salt and mix well into the Achinga leaves. Cover and cook on low flame for 2 minutes. Turn off the flame.
