Step 1

For preparing pepper carrot rice, soak rice for 10 to 20 minutes.

Step 2

Heat oil in a vessel. Add in onions and fry well.

Step 3

Then add in capsicum and carrot, Saute for 3 to 4 minutes.

Step 4

Stir in the soaked rice, 4 cups of water, salt, pepper and soya sauce. Stir it. Allow it to cook with a closed lid in low flame, till the water evaporates. Put off the flame.

Step 5

Garnish with pepper powder and coriander leaves. Close the lid for 5 minutes.

Step 6

Pepper carrot rice is ready. Serve hot with chicken curry, mutton curry, etc.
