Step 1

For preparing pineapple pancakes, preheat a skillet over medium heat and coat the pan with oil.

Step 2

Blend eggs, buttermilk, butter, pineapple and salt to a fine paste. Pour it into a bowl.

Step 3

In another bowl combine sugar, maida, baking powder, baking soda, cinnamon and all spice.

Step 4

Slowly add the blended wet ingredients into the dry ingredients and mix well avoiding lumps.

Step 5

Pour the batter in 1/4 cup portions into the hot pan. (Should form 5-inch circles)

Step 6

When the batter stops bubbling and edges begin to harden, flip the pancakes. They should be dark brown. Cook it on both the sides.

Step 7

Pineapple pancakes are ready. Serve hot.
