For preparing Podi Payasam , firstly heat the milk in a pan.

Take some hot mik and mix rice flour with it.

Add this mixture into the milk and stir well . Cook it for 3-5 minutes on medium flame. Add a pinch of salt also.

In a pan, add 1 / 2 cup of water and add grated jagerry, melt it to form a thick syrup.

Filter this jiggery syrup and pour it into the rice flour mixture. Stir it well. Add cardamom powder.

Add 1 tbsp of heated ghee on top of the payasam.For garnishing, heat ghee in a pan, roast cashews and raisins.Drop it on the payasam.

Podi Payasam is ready to serve. Serve it hot or cold . it can also be served by sprinkling some cooked puttu powder on the payasam.
