Step 1

For preparing pork with thai brinjals, heat oil in a vessel.

Step 2

Add the green curry paste and fry until there is a nice smell.

Step 3

Stir in half the coconut milk little by little. Cook over low flame for 5 minutes, until the oil begins to separate.

Step 4

Then add pork, lime leaves, fish sauce, sugar, water and brinjals. Cook and stir in the remaining coconut milk.

Step 5

Allow it to a simmer and cook until the pork and brinjals are done. Remove it from the flame.

Step 6

Garnish with basil leaves.

Step 7

Pork with thai brinjals are ready. Serve hot with noodles.
