Step 1

For preparing potato and beetroot stir fry, boil some water with salt. Add potato and beetroot. Cook well(do not over cook it). Drain and keep aside.

Step 2

In a pan, heat oil. Add fennel seeds, fenugreek seeds and garam masala and ginger-garlic paste. Add the cooked potato and beetroot in to it and fry well,

Step 3

Add coriander powder and sprinkle little salt.

Step 4

Add onion, green chillies and cilantros.

Step 5

Mix very well. When all the spices are coated well, remove from flame.

Step 6

Serve this as a side dish for chappathi as well as curd rice.

Step 7

Potato and beetroot stir fry is ready.
