Step 1

For preparing potato with mushrooms, preheat the oven to 200 C(400 F).

Step 2

Brush the potatoes with 1 tbsp of oil and prick it with a fork. Bake for 30-35 minutes until soft.

Step 3

Heat the remaining oil in a pan and splutter mustard seeds.

Step 4

Add the onions, mushrooms, garlic and red chillies. Saute for 5 minutes.

Step 5

Then add in chilly powder, cumin seeds, coriander powder, turmeric powder and salt. Saute for 3 minutes.

Step 6

Toss in the tomatoes and allow it to simmer for 5 minutes.

Step 7

Cut the potatoes in half lengthwise and scoop out the soft flesh into a large mixing bowl. Mash the flesh to a course texture using a fork.

Step 8

Add the mashed potatoes to the pan with the coriander leaves. Allow it to simmer for 5 minutes until it thickens.

Step 9

Potatoes with mushrooms is ready. Serve hot.
