Step 1

For preparing prawn veggie rice, heat oil in a pan and splutter mustard seeds.

Step 2

Toss in the split bengal gram and cashew nuts. Saute till it becomes brown.

Step 3

Add in the curry leaves, onions and green chillies. Fry it till the onions become golden brown in colour.

Step 4

Then add turmeric, salt and chilly powder. Saute for a minute.

Step 5

Stir in the grated carrot, prawns, capsicum and pepper powder. Sprinkle a little water.

Step 6

Allow the carrot and prawns to cook on low flame with a closed lid.

Step 7

Add in the cooked green peas and rice.

Step 8

Pour in the lemon juice and mix well.

Step 9

Garnish with coriander leaves.

Step 10

Prawn veggie rice is ready. Serve hot.
