Step 1

For preparing punjabi namkeen chawal, cook the soaked gram in little water till soft & tender.

Step 2

Cool and mix well with your hands to mash.

Step 3

Add it to the ginger-garlic paste, chilly powder, turmeric powder, gram flour and salt. Mix well.

Step 4

Heat ghee in a pan, prepare small balls with the gram flour mixture and fry till golden. Drain and keep aside.

Step 5

Heat 2 tbsp ghee in a pan and fry the onions, cardamoms, cloves, cinnamon, bay leaves and aniseeds till brown.

Step 6

Add the rice, fry for a while and cook with 2 cups of hot water till half done.

Step 7

Add the fried balls, cover and cook over a low flame till it is fully cooked.

Step 8

Punjabi namkeen chawal is ready.
