For preparing rabbit with thai brinjals, heat oil in a vessel.
Add the green curry paste and fry until there is a nice smell.
Stir in half the coconut milk little by little. Cook over low flame for 5 minutes, until the oil begins to separate.
Then add the rabbit, lime leaves, fish sauce, sugar and brinjals. Cook for 5 minutes then stir in the remaining coconut milk.
Allow it to a simmer and cook until the rabbit and brinjals are done. Remove it from the flame.
Garnish with basil leaves.
Rabbit with thai brinjals are ready. Serve hot with noodles.
