Ingredients

Directions

Step 1

Heat oil in a pan or a kadai.

Step 2

Fry all ingredients for the masala by adding them one by one(or each separately) till they lose their raw flavor.

Step 3

Grind them to a fine paste.

Step 4

Boil red gram and mash.

Step 5

Add vegetables (except tomato) along with turmeric powder, salt and allow to boil till vegetables are cooked.

Step 6

Soak tamarind in 1/4 cup water and squeeze out the juice and add this to the boiling vegetables.

Step 7

Add cut tomatoes and allow it to boil.

Step 8

Add the ground masala and boil.

Step 9

Heat oil in another small frying pan.

Step 10

Splutter mustard seeds, fenugreek seeds, red chillies and curry leaves.

Step 11

Pour the above seasoning into the sambar.

Step 12

Garnish with coriander leaves.

Step 13

:- Serve with rice, dosas or idlis.

You havent mentioned the amount of vegetables to be used.Palakkad people wont use ladies finger for sambar?

Ramya VYes, we do. But we make sambar with just vendakka, onions..and optionally tomato....mostly 2-3 vegetables only...

Awesome would be an understatement and i mean that.I usually make about 4 or 5 different kinds of sambar but the palakkadan sambar is way ahead in the league.Thank you Ramya for sharing this wonderful recipe. Looking forward to many more gems from you.
