Step 1

Mix together flours and all other ingredients, except for the half cup oil.

Step 2

Gradually rub in the half cup oil, till it is evenly distributed.

Step 3

Add enough water to make a firm but pliable dough and knead for a minute or two.

Step 4

Cover in clingwrap and rest for an hour.

Step 5

Roll out on a floured surface to about 1/4 cm thick and cut into long strips(About 6cm long and 1 cm wide).

Step 6

Heat oil in a pan, till it is fairly hot.

Step 7

:- Test by placing one strip in oil, it should float to top and bubble, but
not brown too quickly.

Step 8

Once oil is ready, fry the pooris, a few at a time, turning frequently, till golden brown and crisp.

Step 9

:- They should take a few minutes in order to get nice and crispy.

Step 10

Repeat the process, using all the dough.

Step 11

Place fried pooris on an absorbent paper to soak up excess oil and cool completely.

Step 12

:- Store in an airtight container.

Step 13

:- They can even be frozen by placing in a plastic bag and then in a container in the freezer. When you need them, simply leave out at room temperature and serve.
