Directions

Step 1

For preparing seafood with pineapple, shell and de-vein the prawns, leaving the tail intact.

Step 2

Break the salmon into large pieces.

Step 3

Drain the pineapple, reserve 62ml of syrup for dressing.

Step 4

Combine pineapple syrup, watercress leaves, prawns, salmon, pineapple and capsicums. Take a spoonful of this mixture and place it on to the pre-washed lettuce leaves on a serving plate.

Step 5

Sprinkle parsley over it.

Step 6

Combine mayonnaise, cream and tomato sauce in a blender and pour it over just before serving.

Step 7

Seafood with pineapple is ready. Serve immediately.
