Step 1

For preparing shrimps soup, heat butter in a pan. Saute onions, garlic, ginger and leeks. Cook it for 10 minutes in low flame until the veggies are tender.

Step 2

Cut shrimps and potatoes into small cubes. Add it to the above pan and allow it cook for 1 minute.

Step 3

Add in the fish stock and bring it to a boil.

Step 4

Take another small bowl with saffron threads and crush it with the back of the spoon as much as possible. Take a teaspoon full of the stock and pour it into the saffron. Mix it well.

Step 5

Pour it back into the soup. Allow it to cook for 5 minutes.

Step 6

Season with salt and pepper.

Step 7

Then add in the green onions to the soup. Cook it for another 1 minute.

Step 8

Shrimps soup is ready. Serve hot.
