In a heavy bottomed pan, heat oil & shallow fry the potatoes. Keep aside.
Heat 2 tbsp of oil in a pan or a kadai.
Stir fry onions for 1 min.
Add capsicum and fry for another 2 mins.
Add chilli powder, tomato paste, tomato ketchup, salt and potatoes.
Toss them well.
:- Serve hot with roti.
