For preparing special vegetable roll, roast the pine nuts and keep it aside.
Heat oil in a deep frying pan and saute the potato, carrot and baby corn for 5 minutes on medium flame with a little water.
Add in water chestnuts, pine nuts and chives. Allow it to cook for 3 minutes and allow the water to evaporate.
Sprinkle salt and pepper powder. Mix well for 2 minutes and remove it from the flame. Allow it to cool.
Spread the salad leaves on a plate.
Take a spoon full of the mixture and place it on each salad leaf.
Special vegetable roll are ready. Roll it and serve immediately.
