Step 1

For preparing special veggie kuruma, in a bowl mix in maida, salt and pepper powder with a little water(avoid lumps).

Step 2

Heat oil in a vessel.

Step 3

Dip carrots, cauliflower, potatoes and green peas in the above batter and fry it in oil. Remove it and keep it aside.

Step 4

In the same oil sautT in the onions and green chillies till the onions become transparent.

Step 5

Then add in ginger and garlic. Saute it for some time till a nice smell comes.

Step 6

Now toss in the tomatoes and sautT it for 5 minutes on low flame.

Step 7

Add in the capsicum along with the fried veggies. Mix it well.

Step 8

Pour in the cashew nut paste and fry it for 2 minutes on low flame.

Step 9

In a bowl mix in corn flour with a little water and pour it into the veggies. Stir it.

Step 10

Pour in 1/2 a cup of water with required salt and allow it to boil till it becomes dry.

Step 11

Garnish with coriander leaves.

Step 12

Special veggie kuruma is ready. Serve hot.
