Spicy Chicken Curry (step By Step Photos)

Ingredients
  

  • 500 gms chicken
  • 2-3 green chilies
  • 1 tsp garlic ginger paste
  • onions medium size chopped fine - 2
  • 2-3 whole red chilies
  • 2-3 tbsps oil
  • ½ tsp turmeric powder
  • ½ tsp red chili powder
  • 2 green cardamoms
  • 1 black cardamom
  • 8 whole black pepper corns
  • ½ tsp whole cumin
  • 3 cloves
  • 1 tsp coriander seeds
  • 1 Bay Leaf
  • Fresh coriander large handful
  • Salt to taste

Instructions
 

  • For the Marinade:
  • Marinate the chicken with + tbsp of oil, + tsp of turmeric, + tsp of red chili powder and salt and keep
  • aside.
  • For the Garam Masala Powder:
  • Dry roast 2 green cardamoms,1 black cardamom, 3 cloves, + tsp cumin, + tsp coriander seeds, 8 whole black pepper corns, 2-3 whole red chilies, 1 bay leaf. Cool and grind to a fine powder.
  • For the Hara Masala:
  • Grind a large hand-full of coriander with 3-4 green chilies, 1 tsp garlic, ginger paste, and salt to a fine paste.
  • Heat the oil and fry the onions till light brown in color.
  • Add the hara masala paste, garam masala powder, and haldi powder to it. Add a little water.
  • Cook on a low flame till the oil begins to separate from the masala,
  • Add the marinated chicken. Saute everything together, add + cup water and salt to taste. Cook covered on a low flame, around 5 - 7 minutes or till the chicken is tender.
  • Serve garnished with fresh coriander.
