Step 1

For preparing spicy idly, first soak raw rice and fenugreek seeds in water.

Step 2

In another vessel soak split black gram in water separately.

Step 3

Grind raw rice, fenugreek seeds, split black gram and cooked rice with required water to make a semi thick batter. Keep it overnight to ferment.

Step 4

The next morning, add in the onion, green chillies, curry leaves, coriander leaves and salt. Mix it well.

Step 5

Heat oil in a vessel and splutter mustard seeds. Add in split chickpeas and sautT it till it becomes a bit brown. Put this into the batter and mix well.

Step 6

Grease idly moulds with oil and pour the spicy batter into it.

Step 7

Steam it in an idly steamer till done.

Step 8

Spicy idly¦s are ready. Serve hot with chutney.
