Step 1

Bake squash at 400F for 20 mins., peel and cut into 1/2" pieces.

Step 2

Heat oil in a large pot.

Step 3

Splutter cumin and mustard seeds.

Step 4

Add onion, curry leaves and garlic.

Step 5

Sprinkle garam masala.

Step 6

Cook into a paste.

Step 7

Add water, lentils, squash, tomato and bay leaves.

Step 8

Bring to a boil.

Step 9

Reduce heat, cover and simmer for 45 mins.

Step 10

Add salt and cayenne pepper to taste.

Step 11

Remove from heat.

Step 12

Stir in cream.

Step 13

:- Serve with naan.
