Step 1

For preparing stuffed skinned potatoes, heat oil and deep-fry the potato halves with their skin on.

Step 2

Allow the potatoes to cool and scoop out the centre portion of the potato with a spoon.

Step 3

Heat the same oil. SautT in the cauliflower, peas and carrot.

Step 4

Sprinkle in the garam masala, cardamom, shredded chicken, salt and pepper powder. Allow it to cook on low flame till the veggies are done. Allow it to cool.

Step 5

Fill each of the scooped potato halves with the above chicken filling.

Step 6

Wrap each of the stuffed potatoes with aluminum foil and bake in a pre-heated oven for 10 minutes.

Step 7

Stuffed skinned potatoes is ready. Remove the aluminum foil and serve hot.
