Cook green gram(whole) in a pressure cooker.
Heat up a pan.
Add jaggery, grated coconut and cardamom.
Cook, until the jaggery melts.
Add cooked green gram.
Cook, until it gets sticky.
Switch off the flame and allow it to cool.
Make small balls off the mixture.
Mix together maida, water and salt, to get a smooth batter.
Dip each ball in this batter.
Deep fry in oil, till brown.
This is a very good recipe.. to avoid the balls coming apart take care not to overcook the gram and let the gram jaggery cardamom coconut mixture be not watery. Plus add a little besan gram flour to the plain flour....this should help it hold together.

Made Suhiyan for the first time and it tasted very good. The ball mixture was very soft to handle but dipping it quickly into maida and frying it straightaway avoided it from being broken.
it was tasty... but it kept on breaking, soaking in all oil.. i`m a beginner, plz give tips to avoid this....
hiiii...this was realllyyy sweeeett...i loved itt...and as a tip i would advice to put the rolls after dippin in the batter into the oil using a heaped spoon carefully..so u cld avoid it frm breakin while fryin it...thanks a lottt...nd keep postin such good recipes...
I am not an expert at Kerala cooking at all, but I found this recipe to be pretty easy to do although a little time consuming. Just a tip, if you want the suhiyan to stick together while making little balls, I added some corn flour and it worked perfectly.

I thought this recipe tasted wonderful but like Lily, I had a very hard time getting the balls to stick together. They kept breaking in the oil or in my hands! I will try it again though, as it seems to be my error, not the recipe.
