Step 1 Sweet & Sour Bitter Gourd Pickle Recipe

Step 1

Clean, Cut and remove Seeds from the Bitter Gourds. Then again cut the Bitter Gourds into little thin and long size pieces (as shown in above picture). Add some Salt into the Bitter Gourd pieces and stir it well and keep them aside.

After about ten minutes, heat Oil in a Cheenachatti/Frying Pan and fry the Bitter Gourd (Pavakka) pieces in this hot Oil (before frying the Bitter Gourd pieces, squeeze them well and remove water fully). When colour of the Bitter Gourd pieces turns into Golden, take the pieces out from the Oil and keep them separately.

Heat the Cheenachatti/Frying pan again and roast the Fenugreek Seeds, Mustard Seeds, Tamarind, Red Chilli and grated Coconut for about 2 - 3 minutes at low flame and put off the stove and keep the roasted ingredients aside to cool.

Grind the roasted ingredients along with Jaggery, required quantity of Salt, Turmeric Powder and some Water and keep this paste separately.

Add Asafoetida powder and fried Bitter Gourd pieces into this Paste and stir it well.
