Step 1

For preparing tamarind juice veggies, heat oil in a vessel over medium heat and saute the onions till it becomes golden brown.

Step 2

Add in cardamom, dry red chillies, madras masala paste, turmeric powder, green chillies, cloves and star anise. Saute it for some time.

Step 3

Toss in the potatoes, carrot, cauliflower and capsicum. Mix well and allow it to cook on low flame with required water.

Step 4

Then add in the tamarind juice, sugar and salt.

Step 5

Garnish with coriander leaves.

Step 6

Tamarind juice veggies is ready. Serve hot with rice, chappathi etc.
