Step 1

For preparing thai coconut-prawn rice, marinate the prawns with turmeric powder, oyster sauce and pepper powder for 1/2 an hour.

Step 2

Heat oil in a frying pan and fry the marinated prawns till it becomes light brown in colour. Keep it aside.

Step 3

Heat the same oil(add more oil if required) in a vessel and gently saute the crushed garlic and finely sliced onions till it becomes transparent.

Step 4

Add the rice and turmeric powder. Mix well.

Step 5

Pour in the water and coconut milk.

Step 6

Toss in the fried prawns, crushed lemon grass, curry leaves, bay leaves and salt.

Step 7

Allow it to cook on low flame till the liquid has been absorbed completely.

Step 8

Remove the lemon grass and bay leaves.

Step 9

Thai coconut-prawn rice is ready. Serve hot with chicken manchurian.
