Step 1

For preparing thick avocado veggie soup, heat the olive oil in a vessel and fry the onion for 5 minutes over medium flame.

Step 2

Add the chilly flakes and fry for 2-3 minutes.

Step 3

Then add in the potatoes, carrot and vegetable stock. Allow it to simmer till done and then allow it to cool.

Step 4

Blend the above cooled mixture until it becomes smooth.

Step 5

Then blend in the avocado, salt and cream.

Step 6

Garnish with coriander leaves.

Step 7

Thick avocado veggie soup is ready. Serve chilled.
