Step 1

For preparing thick brinjal coconut gravy, marinate the brinjals in salt.

Step 2

Heat olive oil in a pan and fry the brinjals.

Step 3

Grind grated coconut, chironji nuts, poppy seeds and sesame seeds to a thick paste. Keep this masala aside.

Step 4

Heat olive oil in a pan and splutter the mustard seeds.

Step 5

Add cumin powder, coriander powder, curry leaves, ginger paste, garlic paste and turmeric powder. Allow it to cook for 2 minutes.

Step 6

Then add the fried brinjals, ground masala, chilly powder and groundnuts. Allow it to cook on a low flame.

Step 7

Pour in the soaked tamarind water and allow it to cook covered on a low flame for 10 minutes.

Step 8

Thick brinjal coconut gravy is ready.
